Wild Boar tenderloin with grilled vegetables
Ingredients for 300 grs.
300 grs of wild boar tenderloin DIBE
½ small tomato
1/2 small red pepper (you can use another type of pepper such as yellow or green)
3 slices of aubergine
a few sprigs of thyme
Black Pepper freshly ground (recommended)
Pepper the striploin and mark it for all their faces in a nonstick griddle or skillet. Once this well browned, reserve it.
Dice the vegetables to your liking and cook them on a grill or hot plate and with a few drops of olive oil until browned.
Place the striploin in a fire dish and put it in the oven at a temperature of 180º until it reaches the desired point.
Cut the striploin in medallions, accompany a base of sealed bread, grilled vegetables, a few cherry tomatoes sealed and a few sprigs of fresh thyme
